
Our business operates in two very distinct but similar sectors both directly involved in providing products and services aimed at the fish consumer.
In the early days Joseph Robertson was a fish merchant and primary processor taking fish from the Aberdeen market and preparing it for other local markets and establishments in North East Scotland. Later the company branched out into the rest of the UK supplying markets as far away as London.
But it was the Frozen Foodservice sector which was to provide the bedrock on which the company was able to set foundations for its future.
Very much based in Scotland many of our clients are today still operating foodservice businesses in and around Scotland by servicing catering establishments both in the cost sector (schools, hospitals etc) and the commercial sector (pubs, hotels, restaurants etc.).
White fish – particularly Scottish Haddock & Scottish Whiting still lead the market in Scotland as Cod was never seen as an indigenous fish of choice in the catering market. Nevertheless, Cod is making inroads into the market as retailers offer the choice in their stores and people return to the species.
In Scotland the butterfly fillet proved to the most important primary method of filleting fish as it gave excellent plate coverage once breaded – today that still rings true but recent times have seen the industry suffer from quota's and fish day restrictions that mean less fish is taken from the seas around our island and more is imported. These imported raw materials are not filleted in the traditional Scottish way.
Today we employ the very latest technology to produce 3D shaped fillets in the style of Butterfly fillets but shaped from laminated blocks using Icelandic or Norwegian Line Caught Haddock & Cod.
We have a range of shapes and weights so that other descriptions such as Chunky can be used with the fillets – all offer a much greater degree of control on the fillet size and reduces giveaway to a minimum for cost control.
Joseph Robertson offer a wide variety of coatings from light, crispy Tempura Batter, to fully flavoured Breadcrumbs such a Korma and Mexican – the array of Breadcrumbs is bewildering sourced from major crumb manufacturers and often bespoke such as Ciabatta Bread, Tortilla Chip, Pretzel - the list is endless.
We have two Master-fry lines able to provide non-fried breaded product designed for robust use in commercial fryers and pre-fried product so necessary for oven baking. These lines feed directly into very large Frigoscandia Gyro freezers operating at minus 45°C.
The fishcake has come a long way in recent times and Joseph Robertson has been at the forefront in the revival of traditional fishcakes particularly in the foodservice sector where fishcakes have now become the norm on any menu as either starter or main course. We manufacture a huge range of flour dusted, standard crumb and speciality crumb fishcakes and even produce hand made or hand finished fishcakes such as the Arbroath Smokie – hand rolled to provide more of a ball linked to an awesome flavour.
Some fishcakes do not have breadcrumbs or batters but remain truly traditional and are coated in nothing more than seasoned flour – much higher in fish content these fishcakes take many forms and sizes.
Speciality crumbs are designed to enhance and compliment the ingredients inside and so products like Smoked Haddock & Applewood Cheese Fishcakes are ideal for rustic crumbs that perhaps contain Oats for a truly traditional taste.
Here at Joseph Robertson we have a specialised recipe room dedicated to producing many different fishcake recipes – skilled personnel able to prepare exacting recipes using the freshest ingredients and real Maris Piper potatoes for mixing and hand crushed Charlotte potatoes for Premiere Top Tier fishcakes.
Fish stuffed and topped with sauce and crustings has grown to be a speciality of the company with products such as Stuffed Plaice, Stuffed Yellow Fin Sole and crusted Cod Loins, MSC Hake Loins and Salmon also a speciality.
In 2009 the company was awarded Best New Seafood Product by Seafish (the trade industry authority on seafood) www.seafish.org for its Cod En Papillote. Hand made the product is a Cod loin topped with Scottish Smoked Salmon & Leek and hand wrapped in parchment.
Within our portfolio of products we have developed a range of pastry products designed for buffet / party and centre of plate main meal ideas.
A Salmon En croûte and a Haddock En croûte provide a classic option in the range of pastry wrapped fish – the company has recently launched a Chicken En croûte to complement the range.
Buffet / Party lines are also in the range of products we offer to both retail and foodservice sectors from Pastry Bites to Pastry stars.
Additionally, we make finger buffet products such as Vol au Vents and coated Black Tiger prawns in Chilli & Maple coating ideal for summer parties, BBQ's and of course Christmas.
